This is Dr. Kim A. Williams, the president of the American College of Cardiology. Our co-founder, Dr. Sofia Pineda Ochoa, had the pleasure of meeting him this weekend in Chicago at the International Cardiovascular Nutrition Summit.
Dr. Williams is both a vegan himself and promotes a vegan diet. In this link, he explains why he became vegan and how eating what he once thought was a healthy diet – including chicken and fish – resulted in him having high levels of cholesterol, which quickly normalized after adopting a vegan diet.
The fact of the matter is:
- Cholesterol is only found in animal foods, not in plant foods;
- Our bodies produce all the cholesterol we need, and we do not need to obtain it from any external source;
- The number one killer in the U.S. is cardiovascular disease (which includes heart attacks and strokes), and cholesterol in our diet from animal foods substantially increases that risk; and
- The only diet shown to actually reverse atherosclerosis lesions is a plant-based vegan diet.
The ethical and environmental reasons are compelling enough to go vegan, but it’s also important to know that we’re not just helping save animals and our planet – we are also saving ourselves.
